Do you have difficulty getting your kids to eat their vegetables? What about yourself…not a veggie eater? There are ways around what one might consider the ordinary vegetables. All you need is a good recipe or a great imagination. The veggie for today’s celebration is the carrot paired with spices, such as cinnamon or nutmeg, raisins and nuts. Carrots add natural sweetness to recipes so you’ll be surprised at all the different ways these little beauties can be incorporated.

Carrot Cake has been made since the Middle Ages, when sugar & other sweeteners were rare & very expensive. So, people used sweet vegetables to flavor puddings. This technique became practically obsolete for several hundred years resurfacing in the 20th century.
